Yellow Wood conducted research to analyze the potential market for organic soymilk produced in Vermont from soybeans grown locally. Yellow Wood researched soy beverage trends, surveyed other soymilk producers, and interviewed potential buyers including distributors, supermarkets, food cooperative and natural food stores, colleges and universities, and restaurants. Yellow Wood also analyzed the economic feasibility of soybean production in Vermont.
